Personally, on the first day I would like to ask about hobbies, what did you do over summer, what is one thing you are looking forward to in greek life, what is important to you in a sorority (scholarship, leadership, etc.) how are you adjusting to the university. These are always ways you can implement how your sorority has helped you through college.

But is it awkward to just jump into "So, what did you do over the summer?" after handshake/name swap?
