ETA: I have some buddies who attended both Valdosta State University and Vanderbilt. You are trying to start your OWN organizations? In that case, I would contact the student organizations office and see what their protocol and procedures are and what the norm is in contacting professors. Emailing the professors before the first day of class may or may not be frowned upon unless the professors are known supporters of a particular cause or group. Other than that, keep in mind that one of the most annoying things can be students emailing you before the semester has begun, and before you have met the student, about something that is not directly related to the course (and technically not related to academics at all).
