I'm not Greek and I haven't rushed yet, but I've been to a fair number of job interviews. Don't do anything drastic; else you'll be more worried about your hair instead of the actual interview/rushing. You might miss out on connections because you'll be thinking, 'Oh God, Oh God, Oh God...my hair..oh no, oh no, oh no...etc'.
At the same time, you want to look great and feel confident. I think a couple weeks before recruitment begins at my university, I'll go to the salon and get it trimmed up (again, nothing drastic). Usually I just shower and straighten it. I like it that way, it doesn't take long to do, and I don't have to mess with it every five minutes. It looks presentable on me. I think what you do everyday is fine.
