This really depends on your school and chapter.

I know that there were many times when we had events on Saturdays.

As a matter of fact, at my school, formal recruitment took place over 2 weekends, so that meant 2 Saturdays of recruitment.

We also have had recruitment workshops, socials, and philanthropy events on Saturdays. I know that other chapters at my school have as well.

It's up to the chapter to decide if they want to accomodate Sabbath observance. I know that we excused girls when there was a religious-related holiday, but I don't know that we had any Saturday Sabbath observers.

I will tell you that it may be difficult for you to be a part of a sorority, if that chapter holds alot of events/meetings on Saturdays and you constantly have to miss them.
