Initiation can take more than one day. If the chapter is housed, the members are required to stay in the house so many times the Marshal or VPS will order/make food for the night. Plus, many chapters have initiation brunches after everything is finished.

You should talk to a few different people: the treasurer, the house manager, the cook and the house director/mother and, when possible, the officer planning the event.

Let them know about your allergy (it's a good idea for the house director to know anyway, just in case) and voice your concerns and ways you have dealt with your allergy in the past. It's been my experience that most cooks are more than happy to work something out or have an alternative option. they just need to know. I'd guess that you're not the only one dealing with allergies.
