Each sorority is different in that regard. It is a great question to ask during recruitment: "Since I transferred, I will be here for 1-2 years as an undergrad and X # of years as a grad student. I am so anxious to be involved in greek life. Will I be able to participate as a grad student as well?"
That shows real interest and not just that you are rushing to put it on your resume.
As far as I know, Kappa allows grad students to remain active if they wish. It does not happen often due to the demands of graduate coursework, but I have seen a few over the years that do it. I have also seen grad students join the local alumnae assn and/or become advisers. We had one grad student at the school where I advise and she served as an adviser for that year and was a great asset to our advisory board.
