I totally agree with keeping the roses in the fridge until you are ready to use them. The year I was pref day head, I kept the roses for pref, bid day and all the ceremonies in the fridge for those 2 -3 days. We did loose a few but most of them came through great. Just don't have the fridge too cold or you will have rosesicles.
