I think adpiucf answered the majority of your questions but I'll throw in my 0.02 since I'm also a UCF alum.
-Are there specific orientations that I would have to attend if i was rushing?
Go to the kick off. I don't think it's mandatory (it might be now though) but it's important you meet your Rho Gamma. She'll explain what will happen through out the week and it'll give you a chance to ask questions.
-Overall, are UCF, UF & FSU steryotypical when it comes to being from out of state and stuff?
I don't think any of those 3 are as stereotypical as schools like Ole Miss or LSU. Things may have changed since I graduated but I don't think they would've changed that much. In a sense, it may help that you're out of state. Nobody will know your high school reputation so you'll only be judged on how you present yourself during recruitment week.
-Do you suggest getting recs to every house? If this is not possible, will i be at a big dissadvantage or do most girls not have them?
Get them. They're not mandatory like other schools but they're good to have.
-Is rush really as intense as they say it is?
UCF rush has gotten more and more competitive over the years. It's intense but not as intense as an SEC school's rush.
