Absolutely, list any and all activities, including part-time jobs and definitely any type of service or church activity. It's just like a resume - do your best to impress!
I hope you will understand that the informal spring recruitment will involve very few sororities - as few as 1 or 2 - that have openings to fill. If i were you, I'd use the spring semester to get settled in, and get out and meet as many people as possible and get involved in a couple of things on campus. Then sign up for the fall recruitment. Yes, being a junior going in will limit you, too, but not as severely as spring recruitment.
And keep your grades up! I think Potential New Members sometimes don't understand how important that is! All sororities have minimum GPAs. Yes, it could be the same as the rock-bottom to stay in school, but most will require a little higher.
