"They might not have had access to their guns." But, apparently the victim didn't have access to the ax at this point. Or, how would ONE man (or 2 or 3, it doesn't say) have been able to subdue a 'martial arts' guy, tie him up, and tie the rope to the trailer hitch?

Yes, you have the right to defend yourself. But, (help me out Kevin or one of the other lawyers on GC) it has to be reasonable force. If someone threatens to throw a rock at me, I cannot run him down with my car and claim self-defense. If they were able to tie his legs/ankles to a rope, why didn't they hog-tie him until he calmed down? If he wouldn't calm down, drive him to the nearest police/sheriff department. This is so clearly beyond the grounds of 'reasonable force', it is mind numbing.
