We had one chapter on our campus that had chapter on a night other than Sunday becuase they had some sisters who went to church both on Sunday morning and Sunday evening. So to accommodate thier beliefs, they moved thier meetings to another night. Plus many other leadership orgs had thier meetings on Sunday so if you were involved in the Student Alumni Board, Student Senate, or a professional fraternity you would literally be running from meeting to meeting on Sunday.
So I could see the advantage of holding some meetings on an alternate night- especially if it started after most night classes had ended (say 9pm or something).
