1 1/2 lb. beef chunks.
Roll in:
1 cup of flour
1/2 cup of cummin.
Tps. of cinnamon.
Once meat is covered, brown in large soup pan with 2 Tbs. of oil.
When browned, add 1 can of defatted beef broth and 1 cup apple juice, simmer for 1 Hour, then add, 2 green peppers, 2 red peppers, corded and sliced thinly.
2 Medium white potatoes and 2 medium sweet potatoes, peeled, and cut in cubes.
Also add, 1 Tbs. honey, and simmer for 35 Minutes or until vegitables are soft but not mushy.
Then add, 2 Granny Smith Apples, cored and sliced, one can of red kidney beans and simmer again for 20 Min.
Searve and garnish with diced blacked olives and grated sharp chedder cheese and parsely flaks!
While it takes a little time, it makes enough for left overs and gets better with time!
