I would love to hear if anyone is in a career like this, what they do specifically, how they like it, personal stories, etc etc.

I'm not, but I took a nutrition class (and got an A) and fell in love with the subject. I believe you can work for food companies or pick up a food science major as well.
I wanted to go into animal nutrition and work for feed companies. Really what I loved about nutrition was the medical aspect (my true calling) but it's a fascinating subject. If you feel that strongly about it, you will find a career. Good thing about college is that they help you pursue careers with your major too.
You don't have to be a dietician though you can be. One of my friends majored in nutrition after taking the same class I did and she now works at a brewery doing quality control. So there are a variety of options for the major.
If you really love it, do it. Listen to your heart.
