It's a coordinated PR tactic. At my school we chose Wednesday because it's the day when Convocation (a weekly student assembly) is held, thereby showing off your letters to the whole student body. All the groups wore letters that day, but you could wear them any day you wanted.

ETA: also a way of showing chapter "unity"
