It's about how a service is conducted in the Anglican/Episcopalian church.
The "high church" service resembles the rituals of a Roman Catholic mass, including Eucharist.
The "low church" is less interested in above traditions, and services often taken from the Morning or Evening Prayer services from the Book of Common Prayer. According to Wikipedia, the Diocese of Sydney (Australia) has rejected the BOC completely.
There is also a "broad church" movement, which encompasses both high and low church ideals.
Oh and a question about religion: Aren't there different denominations of Christianity in the South too? I can't imagine that everyone is part of one denomination and I know that not all denominations agree with each other.
