We have "UCF Idol." It's a singing competition and you have 3 fake judges that are just for show and then a pannel of real judges. Get donations from local businesses and do raffles and give prizes to the best and worst singers.
You could always have a Beta Boxing tournament...< Idea taken from Pike.
