From what I have seen reported on the news and read in the magazines (
Time,
Newsweek, etc. The producers were very careful about making it as realistic as possible. Granted there is the cockpit tape (that I understood would NOT be released to the public, even though it was heard in the Massoui trial) to use for the movie. But apparently many of the actors are actual pilots and flight attendents for actual airlines. Also, the director had sequestered the "terrorists" in a separate hotel, and anywhere else needed from the actors portraying the passengers, pilots, etc. Those actors did not see the faces or talk to the actors playing the "terrorists" until the scene where the plane is taken over was filmed.
