I call this green chicken...sounds gross, I know, but SOOOO good!
Green Chicken Curry
Sauce:
6 scallions
5 green chilies
2 cloves garlic
1 ½ teaspoon ginger
1 ½ teaspoon coriander
½ teaspoon black pepper
Basil
Cilantro
3 tablespoons extra virgin olive oil
Juice of 4 limes
Chicken:
4 boneless skinless breasts
14 oz coconut milk
Chop all sauce ingredients, then whiz in food processor to a smooth green past. Lightly coat chicken with sauce. Add a small amount of oil to a hot skillet. Fry over a hot fire for 4 minutes. Add the rest of the sauce and coconut milk. Simmer until chicken is done. Serve over rice.
