Reduced Fat Homemade Mac and Cheese
2 cups macaroni noodles, uncooked (I use whole wheat sometimes)
2 tablespoons butter
1/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
2 cups nonfat or 1% milk
1 1/2 to 2 cups reduced fat cheddar cheese
1. Preheat oven to 350 degrees.
2. Cook noodles according to package directions. Drain and set aside when done.
3. While noodles are cooking, melt the 2 tablespoons of butter over low to medium-low heat in a 3 quart saucepan. When melted, stir in flour, salt, and pepper. Cook and stir for about 1 minutes to break down any major lumps.
4. Remove pan from burner and add the 2 cups of milk. Whisk to combine, and cook, stirring continuously, until the milk comes to a boil. Boil and stir for one minute.
5. Remove saucepan from heat and stir in cheese until melted. Stir noodles into cheese sauce, and pour mixture into ungreased 2 quart baking dish.
6. Bake 20-25 minutes or until heated through.
Made this last night - goes really well with greenbean! Supposedly, this recipe serves four, but it was fully consumed by two boys and me last night... (ETA: the 23 and 25-year-old boys didn't know that this was almost healthy)
