Not fancy, but my husband's family goes nuts for the little corned beef pickle rollups. You know, where you take a slice of corned beef (or ham), spread some [softened] cream cheese on it, roll it around a whole dill pickle and then slice into 1/2" thick pieces.
I'm partial to a good spinach artichoke dip, myself.
