In my chapter the guys just stood up and made an announcement during meeting. You could always tell what was coming too becuase these guys were always the most whooped up dudes who never spoke. And they would make some really gay speech as if it was some big super big deal. Here is what one would sound like:

Guys in my chapter usually did it during formal. Everyone would gather on the dance floor, brothers would make a circle around the girl (our chapter was around 70 guys and 10-15 pledges), and he would do something (sing to her, play the piano for her. etc.). He would then put the lavalier around her neck, and everyone would applaud.
I would imagine pinning a girl would work the same way if my chapter did it. I'm not sure how it's done at other schools.
My wife is in a sorority and has her own letters, so I never really saw the point of lavaliering/pinning her. Also, I was never really big on the idea in the first place, so I wouldn't have done it even if she wasn't Greek. I always said that if I was that serious about a girl I would propose to her, and that's what I did.
