If you update your i-pod, it will completely replace all of the songs you have on it now, so YES if you delete them from your computer, then they will be deleted from your i-pod when you update it.
If you want to take them off your computer, then I would say make a data CD of the mp3s you want to delete. That way you will have them, and can put them back on your computer if you want to.
ETA: I LOVE my i-pod mini. I did have a problem with it- it just stopped working for some reason, after a few months. I don't know what happened to it, but it just broke.
I took it back to the Apple store WITHOUT a receipt. The guy looked at it and said it would need to be replaced. They had my purchase information in my computer and right away said that a new one would be ordered and it would be there in two days!
I don't know if this would be the case everywhere- but I have to say I got the BEST customer service at the Apple store at our mall!!! I was so impressed. The guy was friendly and helpful, and took care of everything very quickly!
