Pressed Picnic Sandwich
from Martha Stewart "Everyday Food"
1 loaf french bread, split and hollowed
1/2 12 oz. jar oil-packed roasted red peppers
1/2 pound deli sliced meat (ham, turkey, chicken, salami, etc...)
4 slices thinly sliced cheese (cheddar, provolone, havarti, etc...)
Spinach or lettuce, rinsed and dried
1) Brush cut sides of halved bread loaves with oil from jar of roasted peppers. Dividing evenly, layer bottom bread half with roasted peppers, deli meat, cheese, and spinch/lettuce. Top with remaining bread half.
2) Wrap sandwich tightly with plastic wrap and press between two cookie sheets; put heavy canned goods and let stand for one hour.
3) Refrigerate wrapped sandwich until ready to serve. To serve, cut into wedges.
