Easy Pasta

Angel Hair Pasta with Garden Vegetables and Shrimp

Ingredients:

1 cup frozen shrimp (cooked, peeled)
1 cup broccoli (fresh or frozen)
4 to 5 ounces of refrigerated angel hair pasta
1 teaspoon olive oil
2 cloves of garlic, pressed
1 ripe tomato, seeds removed, chopped
2 tablespoons white wine (any type)
pinch freshly ground black pepper
pinch salt
2 teaspoons butter
2 teaspoons dried basil (or other dried herb of your choice)

Instructions:

1. Thaw shrimp in cool water for about 5 minutes; drain and set aside.
2. Chop fresh broccoli; rinse and drain well. Set aside. If using frozen broccoli, remove from package and set aside.
3. Cook pasta according to directions on package, drain, return to saucepan and cover; set aside.
4. Heat olive oil in 9 or 10-inch skillet over medium heat. Add garlic; cook for about 30 seconds. Add tomatoes; cook for about one minute.
5. Add broccoli, white wine, pepper, and salt; cook for 3 minutes. Toss in shrimp and cook until shrimp are hot.
6. Stir butter into the shrimp and vegetable mixture until melted.
7. In a medium-sized serving bowl, toss shrimp/vegetable mixture, cooked pasta, and dried herbs until coated. Serve immediately.
