Maybe I'm wrong, but I think she easily could do that. Ron played but Harry didn't when Umbridge banned Harry for life. And we didn't see Gryffindor win the Quidditch Cup -- Harry and Hermione left the match to go with Hagrid. Ron told them about the match later. I can see much the same thing happening in Book 7.

If Harry were to find it and concentrate on finding the last horcrux, all he'd have to do is look in the mirror and he'd see what and where it is. What happened to it after Harry used it to get the Sorcerer's Stone? Where'd Dumbledore put it?

We don't know where it is, and it may come into play again, but it doesn't answer questions based on concentrating hard enough (like "where are the Horcruxes?") If it worked that way, DD could already have used it to find all of the Horcruxes.
It shows the hearts deepest desire, which for Harry is defeating HWMNBN. From "The Interview":
If Harry was to look in the Mirror of Erised at the end of book six, what would he see?
JKR: He would have to see Voldemort finished, dead gone, wouldn't he? Because he knows now that he will have no peace and no rest until this is accomplished.
