I think having them help out with a few extra duties during the time that won't be missing is perfectly acceptable. i.e. If typically you break it into groups to take turns with tear down or do set up, maybe these members could be assigned two shifts or something. That way it wouldn't be too much of a punishment and yet they would still be helping out the cause.
I probably wouldn't be so concerned about the excused absences but then again, I'm not our chapter's Recruitment Advisor or Advisory Board Chair.
