slight hijack here....
to make the cheesecake more "heealthy" you can use the 1/3 less fat cream cheese, but DO NOT use the no fat stuff. it does not have the ability to keep it's shape and the cheesecake will be runny. the sour cream helps to keep the cheesecake moist. i didn't use it for the longest time to reduce the fat, but it tastes so much better with it! i just use a small container of the reduced fat stuff.
