I would bet that it was an honest oversight on her part and you should speak with her about the money she owes you.
It sounds like she really values having you as a babysitter and, as a mom, I can tell you that means that you definitely have the upper hand in this situation. It is so hard to find a babysitter you like and trust that once you find one, you do whatever you can to keep her happy!
