You dont do serenading down there? Man.
Well, we serenade for different types of occasions.
Both Informal and Formal. Most of the time I serenaded when I was a pledge. It was a lot of fun. Usually a brother would pick out a girl or his girlfriend and I would sing to her. Usually Beta Sweetheart or I took my girl out walking. We'd also get down on one knee when we serenaded.
There were certin occasions where we had our pledge class organize a serenade. We would invite a sorority to a particular place on campus, we'd bring a rose, and we'd all serenade them

Lots of fun.
Formals were another time where we would line all of our dates up and the whole chapter would get down on one knee and serenade. We would do a few songs with and without the pledge class.
Lavaliering was another occasion. One of our brothers had us all get together and go over to his girlfriends dorm. We lined up outside, got down on one knee and we serenaded her, and then our brother dropped the lavalier.
I talked to one Kappa Alpha Theta(Virginia Tech Alum) I used to work with at a restaurant near school. She told me that they had a special serenade for the Betas. It sort of went along with the mulberry bush lullaby song.
