Quick Recipes...
 
I am not much of a cook but I would like to try making a few different things. I eat a lot of chicken and vegetables but am looking for new ways to prepare them. The quicker the better...

Any suggestions??

My fave:

Saute garlic, onions and mushrooms in butter (add chicken if you want) toss in some asparagus and a dolup of dijon mustard and that is it! Remove the chicken and it is a great side dish as well. Serve with egg noodles or rice.

Chicken and Wine

Cooking oil (I eyeball it but it's around 2 Tbsp)
Butter (ditto)
2 boneless, skinless chicken breasts
Salt and pepper (or Mrs. Dash or whatever you like)
1 small onion, chopped
1 clove garlic, minced
1 cup dry white wine or dry vermouth
2 cups water

Place cooking oil and butter in a heavy skillet over high heat, and let the butter melt.

Season the chicken breasts with salt and pepper. Add them to the skillet, and sear them on both sides for a couple of minutes.

Turn heat to medium, cover, and cook for 20 minutes or until chicken is cooked thoroughly. Remove the chicken to a plate.

Turn heat back to high, add the onion and garlic, and saute until onion starts to wilt. Add the wine. Stir, scraping up any bits on the bottom of the pan. Reduce to about 1/2 cup of liquid. Add the water, and reduce to around 1 cup of liquid. (You may want to add a bit of lemon juice for extra flavor.) Pour this mix over the chicken.

This is great with rice and a salad or some steamed veggies.

Boiled Shrimp.

Depends on how much you want to make of course.

Pot with boiling water. Add Old Bay seasoning when you fire up the burner. Add cut up potatoe.
When potatoe is getting soft, test with a fork, pour in shrimp. It can be frozen, it will only take a little longer.

When shrimp is a nice pink then take it out.

Use either red shrimp sauce or melted butter with lemon.

Salad if you want, but who wants to eat that instead of shrimp! :)

Salad made easy.

Buy a bag of pre mixed salad.

Add, bacon bits, flavored crutons (I like the larger ones), green stuffed olives, chow mein brown noodles, sliced boiled egg, and your choice of salad dressing.

I like Bleu Cheese or spicy Italian.

enchilada sauce
corn tortilla shells (to layer)
shredded chedder cheese
chopped green onions
chopped black olives

enchilada casserole

dunk shells into sauce and layer
layer shells with cheese onions and olives repeatedly and back for 30 minutes at 350 and serve

Quick Chicken Pot Pie

1 - bag Tyson's cooked chicken strips, chopped
1 - one pound bag mixed vegetables
1 - can Campbell's Cream of Chicken & Mushrooms soup, low fat/sodium
1 - soup can of skim milk
1 - tube Pillsbury biscuits, lower fat

-Set oven to 450 degrees (or whatever the biscuits say).
-In a 3 quart bowl, mix the first 4 ingredients (saving the soup tab & Label for Education for various charities).
-Nuke for 15 minutes at 70% power.
-Hide the incriminating evidence that you didn't make everything from scratch in a bag at the bottom of the trash.
-Remove from microwave, arrange the biscuits on top.
-Bake for 10 minutes, or whatever the tube says. Biscuits should be browned.
-Serves 4-6 people.

Easy Tostadas

1 15-oz. can black beans
1 15-oz. can diced tomatoes
1 packet of taco seasonings
1 cup uncooked rice (I use boil-in-bag brown Minute rice which is a little more than a cup, but it still works)
1 15-oz. can corn (or use frozen)

Mix all ingredients together and heat. Bake tortillas until crispy, then spoon rice mixture on top of toasted tortilla. Top with lettuce, salsa, sour cream, cheese, whatever. Enjoy!

I also make this as a casserole, just add tomato sauce and/or water and bake at 350 for 30-45 minutes. Top with cheese and bake until cheese melts.
