It's different for everyone, in ours you go to 6 houses one day, 6 houses the next and that's all part of the 1st round. then in the 2nd round you make your cuts, the houses make theirs and you go to 6 houses. in the 3rd round you go to 3 houses and pref right afterwards 1st, 2nd, 3rd.

Since you are interested in IFC rush, I'll address that.

I've heard of two separate "preference" nights for IFC rush. "Preference" night is usually an event or party that is invitation only. The fraternity only invites those men that they may be interested in extending a bid to pledge. However, being invited to an IFC "preference" event may not guarantee a bid to that chapter or any other fraternity.

As for two separate nights, some campus IFCs may allow you to attend two (or more - depending on the structure) invite only ("preference") parties. They are simply held on different (two) separate nights.
