Pumpkin Seeds

I can't give advice on how to better prepare them, but I must say they're too chewy for me to enjoy!
Some coworkers brought some in last year and they were salted...EW! Too much salt and too much chewing! LOL! |
Oh, we love them here! After we carve the pumpkin, we simmer the seeds briefly, roll them in butter, and roast them. One of our favorite Halloween treats!
We do eat them with the shell on. :) |
I love pumpkin seeds, shell and all! Mr. KillarneyRose and the little KillarneyRosebuds don't like them so I just bake them up and share them with our hamsters :)

Just a bit of trivia I read this morning: did you know that pumpkins were considered a staple of the Colonial American diet? It's because of their hard shell, they were able to keep throughout the winter. There was a little poem included, something about eating pumpkin for breakfast and pumpkin at noon, and if there wasn't any pumpkin, they'd have nothing to eat.

I love pumpkin seeds! I also eat the entire thing. I imagine it would take a very long time to peel the shell from the seed, but I'm sure it can be done.

ROASTED PUMPKIN SEEDS
Preheat the oven to 350 degrees Rinse seeds well. For every 2 cups of seeds, put 4 cups of water and 2 tablespoons of salt into a saucepan. Add the seeds and simmer over low heat for 10 minutes. Drain well in a colander. Place on paper towels and pat dry. Toss the pumpkin seeds with melted, unsalted butter (1 tablespoon of butter for every 2 cups of seeds) in a large bowl until the seeds are evenly coated. Spray a cookie sheet with Pam vegetable spray. Spread the pumpkin seeds over the tray and bake for 30 inutes, stirring and tossing occasionally. Seeds are ready when golden brown. If you make these the day before, store in an airtight container. |
I fry the seeds (shell included) with a little olive oil, and then sprinkle salt on them. Yummy!

i love pumpkin seeds. They are the best with a little salt. I eat them with the shell.
