To address some of your specific questions: Yes, your goal should be to secure at least one recommendation for each sorority at the college you will be attending. You may go in thinking you have some favorites sight unseen, but those can (and often do) change as rush week progresses. I don't think you need to add another activity-you seem to have plenty (at least in my book). It isn't so much how many you have, as long as you have an interest in and a passion for the ones you are involved in.
Have you been told by both colleges that you will qualify as a sophomore? If most of your credits will not transfer, that might not be the case. Rush is tougher at many schools, and UGA and Auburn are no different, but sophomores can still be successful. There is no magic formula. It is being prepared with recommendations,having a good GPA, good conversational skills, dressing appropriately and presenting yourself appropriately. If you are friendly with sorority members in the chapters at your school, you might let them know that you will be rushing.
