Pescetarian here, 3 years and counting. My diet is mostly vegetarian though.

I've been a Vegetarian since I was a baby. First cause I was stubborn child, now cause my body can't handle meat after going so long without it.
Not going to lie, it's pretty hard. Anyone have any good vegetarian recipes?

One of my favorites, based on a Williams-Sonoma recipe that i modified:

1 lb penne pasta
2 Tbsp olive oil
3/4-1 c diced red onion
3-4 cloves garlic, minced
2 bunches of kale, stems removed, chopped (not too small)
1/2 c water
1/2 c golden raisins
1/2 c pine nuts, toasted*
balsamic vinegar
lemon juice
freshly ground black pepper

1. Cook pasta according to package directions.
2. In a LARGE pot (the deeper, the better, because of the volume of the kale), saute red onions until transclucent. Add garlic and saute an additional minute or two; do not let brown.
3. Add kale to onions/garlic and saute until wilted. You will need to add half at a time most likely, but it really cooks down.
4. Add 1/2 c water to pot and cover. Cook, stirring occassionally for about 10 minutes, or until kale is tender.
5. Remove from heat, and stir in raisins and pine nuts.
6. Top each serving with a little balsamic vinegar (start with a tsp or two and add to your liking), lemon juice, and freshly ground black pepper!

*You can toast pine nuts in the toaster oven or in a small pan on the stovetop over medium-low heat, shaking/stirring frequently. Nuts are done when they are golden brown and fragrant. I prefer the stovetop because I can watch them more closely and because you stir them, they're less likely to burn.

i guess i would describe myself as pescetarian because i will eat fish if that's the only option but it needs to be fresh. so i eat primarily veggie diet since i don't live in an area of the country where the fish is fresh and i won't eat anything that came out of an ohio lake.

Haha, maybe we should! I'm glad that there are so many of you! For me it was kind of a natural decision. I never ate tons of meat anyway, and I am a huge animal lover so I came to the conclusion that eating animals was something I could just never do anymore.
