Interesting...so they're actually good? I didn't realize conches were so common in Florida (like enough to make fritters out of them)

Conch Fritters
 
2 med. conch, clean & remove skin ½ small sweet pepper
1 small onion
1 stalk celery
1 egg
1 cup milk
2 T. tomato paste
1 t. baking powder
1-1/4 cups flour
1 t. hot sauce
1 t. salt
NOTE: Where conch is not available you can substitute lobster.


Put conch, sweet pepper, onion & celery through a meat grinder. Add remaining ingredients to make a batter. Drop batter by tablespoon into hot oil and fry for approx. 10 min. or until golden.
Serve with cocktail sauce: ½ c. ketchup, ½ t. horseradish, 1 t. hot sauce, mix & serve.

They're really good. And they're just as common as lobster. I like mine with mustard or hot sauce and salt with a lil'ranch.

hmmm...I may need to try those one of these days, although I don't think they make them in SD

I'm sure theyc an be mailed anywhere. They really are good. And it's one of the few things WV can claim as it's own:)

My mom makes really good ones. All my friends love them so when we go to the Gator Bowl she's making us a huge batch to eat on the way down.

And since they look "disgusting", Craig, I will not be sharing any of them with YOU.
