GRITS and other Southern Food

Ok, I see the subject of grits has gotten some attention over on the "GreekChatters say the darnest things" thread but I have a specific question so I'm starting my own thread just for it...so there :D

Grits...I eat them with butter, sugar and milk. I love 'em this way, however I was born and raised in Pennsylvania so what do I really know? Am I doing the grits thing completely wrong???

If so, someone tell me once and for all how the heck I'm SUPPOSED to be eating them?

Oh, and another southern food question...what is hash made out of?

Thanks! :)

Please forgive the yankee...

What exactly ARE grits?

grits: coarsely ground, hulled grain (prepared to a porridge-like consistancy)

they're a lot like cream-of wheat, but much more..... substantial... the actual "grits" are larger than the peices of wheat and made from corn

grits are the "southern" answer to oatmeal

Killarney---- maybe it's a Delta Zeta/woman thing, but I eat mine the SAME WAY.... SUGAR, BUTTER & sometimes a bit of MILK! I've had many, many, Southern compatriates question my heritage due to this "unconventional" method! (due to my grandmother's relentless efforts, I'm a proud member of the DAR, UDC, & DRT historic-ancestry social societies & I NEVER hear the end of certain, "Well, proper Southern Ladies should......" comments)

AggieDZ 07-03-2002 01:46 AM

Oh, as for hash:
it's like *hash*browns.... chopped meat mixed w/potatoes & browned (usually fried)---a lot of people put onions into it as well

Once again, it's just a bit more substantial than the universal alternative, hashbrowns. I think the majority of Southern food tends to go this route.

Couldn't tell ya about the hash...

Grits are nasty to me, but I am from the south, so I am immersed in them. Most people down here eat grits with lots of butter, salt, pepper, and sometimes cheese. I had never heard of people eating grits with sugar til I went to New York. I thought grits + sugar was oatmeal? LOL! Oh yeah, it is a breakfast food, mostly.

Grits are jus that...grits, lol. I am not sure exactly WHAT they are, crushed cornmeal or something. I really have no clue.

When I went up north for the first time a while back, I was with some friends (all from the south of course). We went out for breakfast and one of my girls ordered grits. The server was like "What is a grit?" LOL! Just to let y'all know, there is no such thing as a singular grit. It would be like saying "pass me a grain of salt please."

aggieAXO 07-03-2002 03:42 AM

I have to say I have never tried grits-the name makes me queezy.

my families southern dishes include (usually made on Sundays):

fried catfish (fresh, just caught)
fried chicken, mash potatoes, green beans
my mom would also make a hash like dish
also when it is deer season-venison

I don't eat any of the above-yuk!

PiKA2001 07-03-2002 03:47 AM

I had grits for the first time when i was on spring break in florida past march. Wasnt too impressed. And as for hash, well the only kind of hash I ever heard of(unless u mean hash browns) was the kind you smoke.

aggieAXO 07-03-2002 04:40 AM

oh I forgot one: chicken and dumplings, again yuk!

DeeGeePee 07-03-2002 10:11 AM

I HATE GRITS!!!!!!!!!!!!!!!!!
When I go and visit my family in Tennessee, we eat entirly too much. I mean, down there they have like EVERYTHING at every meal. Like for breakfast, we had fried fish, sausage, bacon, eggs (which they cooked in this huge skillet FILLED with grease, so its like its boiling in oil), sweet rice (which I make and LOVE), bisuits, corn bread, fruit, and juice. That's a bit much, after that, I'm done for a LONG time. Then to have dinner, with all that food, and desserts. DOes anyone LOVE chess pie? That is the BOMB. And nobody bakes cakes and stuff like Southerners, for real.

But, I'd be scared to eat meat down there because my family has a farm, and I'd be suspect as to whether the fried chicken on the table was just running around the yard LOL.

SigmaChiCard 07-03-2002 10:19 AM

I never have eaten nor have I ever seen grits, but I envision them to be absolutely disgusting

Killarney, LOL! I live in the south and grits are served EVERYDAY for breakfast and brunch. We usually eat them with butter and cheese (also known as cheese grits). It seems like most people north of MD eat theirs similar to oatmeal like Librasoul22 mentioned.

Types O' Hash

There are two kinds of hash that I know of: hashed browns (the julienned potatoes, fried into a pancake like form) and corned beef has (meat and diced taters fried up and served with eggs)...I like the latter, not a fan of the former.

Fave breakfast is eggs, ham, sausage, grits, bagel with cream cheese, side of flapjacks: hearty, fattening and oh so yummmmm!!! :D

AKA2D '91 07-03-2002 11:28 AM

This is just too funny, GC (in the general forum) and Grits.

Grits are great. :D If they are overcooked, they are nasty. I know some people mix jelly in their grits or bacon pieces.

My grandmother always told us to eat grits because they would "stick to your ribs". That means, you would not become hungry for a long time.

Hash, I'm not a fan of, but I love hash browns.

I eat traditional southern food (including dumplings). I am learning how to cook a few dishes, from "scratch".

LMAO

:D

DeeGeePee 07-03-2002 11:28 AM

sigmagrrl, now thats a big breakfast!! LOL I think my favorite breakfast is what I had on the weekends when I was in school in Philly and I stayed on campus. I'd get the potato of the day (homefries or whatever), bacon, then I'd get some veggies from the salad bar and take them to the grill line and have the grill man make me an omlet, then I'd get a bagel with cream cheese and orange marmalade, fruit, and 2 juices (cuz them damn cups were so small). Man, that was good stuff.

At home, I love sweet rice (or country rice, rice with milk and sugar), home fries with plenty of onions, veggie sausage patties (from Morning Star Farms, they taste just like sausage, I dont do pork anymore), eggs with mushrooms, onions, peppers, tomatoes and cheese, fruit, and biscuits. But that's rare to have ALL of that at once.

DeeGeePee 07-03-2002 11:29 AM

OH! and I LOVE hash too, with some eggs and biscuits. I put ketchup and hot sauce on it!!

Dionysus 07-03-2002 11:55 AM

My mom's side of the family is from Mississippi, I grew up on the stuff! It's great with butter and salt and bacon bits/crunched bacon on the top.

valkyrie 07-03-2002 12:01 PM

Oh there is this restaurant in Chicago (Wishbone) that serves southern food, and I got cheese grits there -- I had never tried them before, but they are DELICIOUS. I've also had grits with jalapeno peppers -- also amazing.

Why yuk? Chicken and dumplings, at least made by my mom or sister, are great.
:)

OMG! That was one of my favorite childhood foods! My grandmother (who is Polish, not southern) used to make it for me all the time. I never knew it had a name until now - Thanks! :D

aggieAXO 07-04-2002 03:34 AM

My mom is a great cook, I just don't like meat or chicken (esp. chicken)

Thanks for clarifying.

AGDLynn 07-04-2002 06:59 PM

I like my grits simple...with butter.
I hate chicken * dumplings.

FYI, there was an enterprising Southern Lady who started a business based on "GRITS - Girls Raised In The South". Needless to say, she's done pretty well!;) :D

Glitter650 07-04-2002 07:11 PM

Being from California I had never eaten grits until I was nine and visited the southern east coast... (Florida, the Carolinas) but I must say I enjoy them greatly... they are very closely related to cream of wheat... another thing I had never tried until I visited the south was hush puppies.. WHY DO YOU SOUTHERN PEOPLE hide these things from us ?????!!! OH they are sooooo great !! I LOVE LOVE LOVE them !! I find it interesting how things like grits and hush puppies can't find their way from the south... but borders and starbucks have seem to creep onto every corner !
