Great recipes! I've never tried dump cake with cherry pie filling, though I have fixed it with pineapple and fresh blueberries when they're in season. Mmm!
Here's one that I originally saw on Rachel Ray's 30 Minute Meals. I've played with it a bit, and my husband asks for it all the time: SHRIMP LETTUCE WRAPS 2 tablespoons honey 2 tablespoons soy sauce 1 lime, juiced (I use the bottled stuff, but fresh would be better) 2 teaspoons sesame oil 1/4 seedless cucumber, peeled and chopped 1 green onion, sliced thin Dash of garlic powder Salt 1 pound cooked medium shrimp, tails removed 1/2 head iceberg lettuce, cut into wedges Mix the honey, soy, lime juice and sesame oil in a medium bowl. Add cucumbers, green onion, and shrimp and toss to coat. Season the salad with salt and garlic powder. Serve shrimp with lettuce, to wrap and crunch on spoonfuls of salad. |
And here's my sister in law's best appetizer recipe:
BUFFALO CHICKEN DIP 1 lb or so of chicken breast 8 oz blue cheese 2 packages of Philadelphia cream cheese 12 oz Tabasco sauce (you can use less if you’re not into HOT) 1 package (16 oz or so) of shredded cheddar cheese) Directions: Bake or better yet, grill the chicken breast Once the chicken is done, cut (shred the chicken breast) as finely as possible In a large mixing bowl mix the blue cheese, cream cheese together, ad in the Tabasco sauce and mix well. Then add the shredded chicken again mix well. Take a good size baking sheet (or a couple of small ones) spray on some Pam, then spread the whole mixture onto the baking sheets. Or baking pans. Top off with the shredded cheddar and bake in a 350 degree oven for about 30 minutes. (The cheese will start bubbling and browning a bit like a pizza). Serve with crusty bread or tortilla chips. Frito's Scoops are ideal. |

California Salad
My grandma always made this and called it Cauliflower Salad, but my moms said it's actually called California Salad. It's a nice summer salad that is sweet and tangy at the same time. It makes a huge amount though, just a warning!
Salad itself is: 1 large head Califllower cut up 1 large head Lettace ripped up 1 medium onion chopped up 1 lb bacon cooked til it is crispy, then drained and crumbled up Dressing is: Mayo type salad dressing (1/2 bottle) grated Parmesan cheese (1/2 shaker bottle) 2 cups sugar (you can add more or less depending on your sweet tooth) 1/2 cup apple cider vinegear Pour dressing over salad about 30 minutes before you serve then store in fridge before serving. |

Mix.:mad: You could mix it with Sour Cream and use as a Veggie Dip=Radish, Carrot, Broch, Celery, or The White veggie, Califlower. God, it was good!:) Got one pack left, maybe I need to sell it on ebay!:D What a great take to a party! |
Red Bean Salad:
Different size of Red Beans. Add, Mayo, sweet relish, a touch of Mustard and horse radish depending how spicy you want it! My old one Gooey Buns, No, not the sweet kind as in donught!!! It is becoming Foot Ball Season so!!!! Party Animals and easy fix! Balogna or hot dogs, ground up. Add, mayo, sweet relish, horse radish, and a little mustard. Stir like crazy!:D Put on Deli Buns, put cheez-whiz on one side of bun top, close it and bake in oven at 350 for @ 12-15 minutes. Cheese melts down into the mix, and add side dishes. Bun is crispy! If you dont like it, well, You are weired!:D |

Baked Fillet of Fish.
Fish Fillets, in a baking dish with an aluminum tent. Also helps clean up later. Melted butter and lemon juice. 350 in oven for @ 10-15 minutes or until done. Nuked tater on the side with the juice from cooking.:D |

Rice A Roni Chix Salad
2 Boxes CHICKEN flavored RICE A RONI
Cook rice per directions on box; Once R-A-R has cooked, allow to cool at room temp; After R-A-R is cooled, add to the R-A-R in a big mixing bowl: 2 large cans of drained canned chicken; 2 cans of sliced olives; Chopped celery or celery salt if desired; Chopped green onions or onion powder to taste; Stir in desired amount of mayo with all items until desired texture is reached. Allow to CHILL in fridge. ENJOY!! |
Cheatin' Fried Rice
2-3 boxes of Rice a Roni FRIED RICE;
Cook rice per package directions. I usually use an electric skillet or transfer the rice to a crock pot since I have to cook for an army each day (we are a family of 5 :) ); After the R-A-R has cooked, set to "warm" setting. Add CUBED steak (left overs--we always BBQ a couple extra steaks for this); Cubed pork chops; Pork roast or pot roast...left over chicken breast meat works too. Stir in some almond slivers, water chesnuts and soy sauce to taste. You can also add a couple scrambled eggs, stir fry veggies and/or frozen peas and carrots if you like or some pea pods. Serve after all the contents have had a chance to blend and warm up. (I usually make this the night we BBQ or whatever, allow to chill overnight and reheat--the spices are more prevelant this way...) Great served with egg rolls!! |
No Box Pasta Salad
2 bags rotini, shells, penne or mix & match pasta (colored pastas are fun);
Boil pasta and drain. Run COLD water over all pasta for cool down; In a BIG mixing bowl add to COLD pasta: 2 CANS OLIVES (can be sliced, chopped, whole...whatever you prefer); 1 Lb bag of baby carrots; Bacon bits or crumbled bacon to taste; Celery salt to taste; Stir in mayo or Miracle Whip (your choice) until desired consistency is reached; Italian salad dressing until desired flavor is reached; Top with shredded parm. cheese or sprinkle (I prefer shredded); Some people also like to add cherry tomatoes, chopped celery and chopped green onion... I have also made this salad and added pepperonni and salami. We live on this salad in the summer and will add a bit more mayo or Italian dressing after the salad has been in the frige to give it a bit more zip. |
Wanna B Ice Cream Cake
13X9 baking pan--metal works best;
Line with Ice Cream sandwiches...you choose the flavor (I usually get three boxes of the 'bargain' ones for this); Spread cool whip on the layer (spatula works great) and drizzle choc. syrup, caramel, butterscotch ice cream topping--whatever you like--along with crushed Reeces, Heath Bar, Butterscotch and/or M & M's--again cooks' choice...same with crushed peanuts, walnuts and/or cashews or pecans... Add another layer of Ice Cream sandwiches and repeat "frosting" and sprinkles. Cover pan with foil and allow to freeze for at least an hour. |
