A good brisket (as opposed to a tough, stringy slab of meat) is the food of the Gods. There are many recipes for brisket. I have two that are great. But these are Jewish briskets, "traditional". But then you have Texas brisket. We had it in Austin. What all briskets have in common: They need to cook a LOOONG time. In Texas and in Jewish homes you start with the butcher for the best brisket. Not too fatty, but with fat (or it is like eating shoe leather). I usually buy prime beef. In Texas they usually start with a rub (see above) and then the meat is placed in a smoker. Wary's rub sounds amazing. I admit that I can't smoke a brisket (or anything else) for 8 hours. So, I'm going to try this recipe. And yes, making it the day before is important if you cook the brisket in the chicken broth or using my recipes. AzTheta: If you happen to come to my neck of the woods, I'll make you a brisket...or two. Then you can compare.. Now back to the important stuff: a wonderful recruitment story! *sorry for the digression. |

Good Luck to your daughter. My daughter is also going through recruitment at UT next week. I am so sad to see her leave but so excited for her to begin this chapter of her life. :)

^^^Good Luck to your daughter! I was just in Austin over the weekend moving my daughter into her new home for the year. She is so excited to be "on the other side" this year! I'm excited that she is too..last year was rough, but she had a very happy ending!
My best advice to your daughter is to keep an open mind. Every single chapter at UT is excellent and they all have so much to offer! It is so easy to get caught up in the chatter, but tell her to try to ignore it and go with what she is feeling..It will be a great week for her and Wary's daughter! Good luck to all!! |
Convocation tomorrow! She's excited and less nervous than she was last week, and really, she couldn't be more ready. I'm taking the advice of several of you and doing the recruitment in a different thread... We'll leave this one for food, I guess -- it's just gotten awfully long to continue on here. So, I'll see you on the new thread!
