Easy Corn Chowder
Fry up three pieces of bacon in a medium sized sauce pan, and then use the drippings to saute a finely chopped onion and a finely chopped green pepper. Chop up a few pieces of bacon into fine bits and toss those into the mix. Set aside. In a soup pot, combine 3 tbs melted margarine with 3 tbs flour. Combine over low heat. Add 1/4 gal. 2% milk. Stir out any clumps. Add your bacon and vegetable mixture, along with a bag of frozen corn (off the cob). Bring to a slow boil, lower temperature and cover. Simmer for 15 minutes. Add salt and lots of pepper to taste. You may want to add more milk to keep the mixture from getting too thick. |

1 tablespoon olive oil 1 onion, chopped 1 green bell pepper, chopped 2 cloves garlic minced 1 can chopped tomatoes 1 pound ground chuck 1 tablespoon ground cumin 1 1/2 tablespoons chili powder i can tomato puree 1 can chopped jalapenos 2 cans (19 oz each) kidney beans heat the oil in a dutch oven or stock pot over medium heat. add onion and bell pepper and cook until onion is translucent. add garlic and saute for one minute. raise the heat to medium high and add the gound chuck,chili powder and cumin. stir and cook until meat is browned, about 10 minutes.(if the meat renders a lot of fat, drain the meat mixture) add the tomato puree , the can of tomatoes and the cans of beans, if you are using beans. stir until blended. turn heat to lowest setting and let the chili simmer for a while. if the chili is too thick for your liking, you can add more tomato puree or water until you get the consistency you prefer. you can also add more cumin and chili powder if you like your chili super hot. for those who prefer less of a punch to their chili, leave out the canned jalapenos and reduce the chili powder to 1 tbsp. and the cumin to 2 tsps. |

No measurements, just look and figure how You like it!:) Ground Beef Eggs to hold together. Crumbled Salteens to keep it a little dryer. Ketchup. Mustard. Garlic Powder. Oregeno.* Salt. Pepper. Celery Salt. Hot Sauce. Horse Radish. Onion. Worstchiser sauce. Bake in Baking dish at 375 of an Hour or so. Take out and put tomato paste on the top (or BBQ Sauce), and bake for another 1/2 Hr. |
Gooy Buns!
No, not the sweet Roll kind!:)
Package of Bologna or Hot Dogs. Grind up fine. Add: Mayo, Horse Radish, Mustard, and Sweet Pickle relish drained. Mix Well. Place on Deli Bun and use warm Cheeze Whiz to slather on the top bun on the inside of it! Cheese and Mix together when closed. Place on a cookie tin in the oven at 375 for @ 25-40 Min. Bun gets crispy and the cheese melts across the mix. Add any side that You want. Great for Football Games and Kids.:) |
Home Made Ice Cream!
Must have:
Gallon Ice Cream Frizzer, Rock Salt, and Ice. Mix Well: 5 eggs. Can of Evaporated Milk. ( can use heavy cream instead for a creamier texture) 1/2 Gallon of Milk. Tablespoon of Vanilla. 3 1/2 cups of sugar. 1/2Gal.Milk. Put in Mixer Can and start mixing, add ice and plenty of rock salt. Takes @ 30-40 Min. I make only Vanilla as can bake a pie of My Choice, add Presearves of My Choice, or Chocolat Syrup.:D |

Make two pattys, place either Chedder Chesse or Swiss Cheese in the middle of pattys and fry or on Grill. Put on Bun or eat with side dishes!:D Got to have Beans with My Chili!:D |
Easy BBQ Beef (great for football parties):
-Roast Beef (figure about 1/2 pound per person) -Can of Beer -1 small onion, chopped -Salt, Pepper and -BBQ sauce of your choice (1 bottle) -kaiser rolls Put your roast into a slow cooker, and pour beer over it. Add any of the spices you care to add, but this is one time that less is more. Cook until it's ready to fall apart (I'd give you a time, but since every slow cooker is different, it's impossible to do). Leaving the au jus in the slow cooker, take the roast out, and shred, using two forks to pull it apart. (When this is done with pork, this is what's referred to as "pulled pork") Put it all back into the slow cooker, keeping it on low or warm. To serve, put out the slow cooker with tongs, the BBQ sauce (warmed about 2 minutes in the microwave) in a separate bowl, and the rolls. Make sure your guests know that they can mix the sauce with the beef, or eat the beef au jus. If you're having a lot of people, and have access to two slow cookers, you can cook & shred both roasts, then add the BBQ sauce to the one but not the other. Should you have leftovers of the au jus one, you have either a great base for soup or a poor man's stroganoff (drain all but a cup of the liquid (save it and freeze it for soup!), boil noodles and put on plates, then whip 1 small can of drained sliced mushrooms & 1 pint of sour cream into the beef & juice; serve over noodles). |
Reduced Fat Homemade Mac and Cheese
2 cups macaroni noodles, uncooked (I use whole wheat sometimes) 2 tablespoons butter 1/4 cup flour 1/2 tsp. salt 1/4 tsp. pepper 2 cups nonfat or 1% milk 1 1/2 to 2 cups reduced fat cheddar cheese 1. Preheat oven to 350 degrees. 2. Cook noodles according to package directions. Drain and set aside when done. 3. While noodles are cooking, melt the 2 tablespoons of butter over low to medium-low heat in a 3 quart saucepan. When melted, stir in flour, salt, and pepper. Cook and stir for about 1 minutes to break down any major lumps. 4. Remove pan from burner and add the 2 cups of milk. Whisk to combine, and cook, stirring continuously, until the milk comes to a boil. Boil and stir for one minute. 5. Remove saucepan from heat and stir in cheese until melted. Stir noodles into cheese sauce, and pour mixture into ungreased 2 quart baking dish. 6. Bake 20-25 minutes or until heated through. Made this last night - goes really well with greenbean! Supposedly, this recipe serves four, but it was fully consumed by two boys and me last night... (ETA: the 23 and 25-year-old boys didn't know that this was almost healthy) |

Nacho Casserole
Ingredients: 1 large bag Doritos-- crushed 1 can rotel tomatos 1 can cream of chicken soup 1 can of cream of celery soup 1 tsp chili powder 1 cup of chicken broth 12 slices of American cheese 1 lb browned ground beef (or turkey) Directions: In a 9x13 backing dish pour 1/2 of the doritos. Combine rotel tomatos, cream of chicken soup, celery soup, chicken broth and chili powder in a bowel. add 1/2 of the soup mixter to the doritos and layer 1/2 of the ground beef on top, followed by 1/2 of the cheese. Then layer the rest of the chips, soup, beef, and cheese. Bake on 325 for about 30-45 minutes. This is great for potlucks or just a good dinner. And you can use the baked doritos and low fat cheese... and it's just as yummy! |
Broccoli Casserole
(This is a must from me on Thanksgiving!) 2 packages frozen broccoli, cooked & drained 1 can mushroom soup 2 eggs 4 ounces finely shredded cheddar cheese 1/2 C. mayonnaise 1 medium onion, chopped 1/2 C. cracker or bread crumbs butter or margerine Set oven at 350 degrees & grease a 9"X13" baking dish. Into a blender (or food processor), mix the soup, eggs, mayo, and onion until smooth. Add the cheese, blend until smooth. Note: if you add the cheese too soon, it will goop up everything! Put cooked broccoli into the baking dish, then pour the liquids over it. Fold until mixed. Top with the crumbs, and dot with butter. Bake for 30 minutes. |
Irish Soda Bread
This is traditional one, but not molded traditionally Preheat oven to 350 degrees, and grease 2 loaf pans. 1 1/2 C. Buttermilk, COLD 3 T. melted Butter 2 beaten Eggs 3 1/4 C. Flour (NOT self rising!) 2/3 C. Sugar 1 t. Baking Soda 1 T. Baking Powder 1 t. Salt 1 1/2 C. Raisens or Currants (as to preference) In large bowl, sift the dry ingredients together. In another bowl (or blender), mix the rest of the ingredients, then add to the dry ingredients. Fold until mixed, and pour into greased pans. Bake for 45 minutes, then mark top with an X. Cook for 15 minutes longer, buttering the top when down. Let it set for 10-15 minutes prior to eating. There may be better receipts for this, however, I was given this by a great-grandmother from the auld sod! |
